Why does my SMBC adn IMBC loose their fluff and taste like cream cheese consistency after being out of fridge and it tastes more like butter? What can I do or am not doing?

They do taste like butter right out of the fridge. You need to let them come back to room temperature and rewhip it before you use it.

If you've already iced the cake, let it come to room temp before you eat it.
