I finished my first cake last night...took me about 3 hours to decorate, but I am so proud of it. I have never ever covered in fondant (other then small 4" ones to test out the fondant), I have never stacked a cake either.

I want to thank everyone who answered all my questions about stacking, fondant, colours and the such....you all are a amazing amount of help!

P.S. Just thought I'd mention that I grew up in Hamilton and all my family still lives in and around there (some in Stoney Creek, Burlington etc.) and maybe next time I visit we could maybe talk cake and meet up at Tim's somewher (boy am I ever having withdrawals )
