I am doing my first wedding cake this Saturday. I read on this site that it's ok to start baking Wednesday for a Saturday wedding. But I don't have room in my fridge. Will buttercream be ok for 72 hours at room tempurature? I don't want to give anybody food poisoning. What about the cake itself - will it get soggy? Thanks.

It will be fine at room temp. as long as you don't have perishible fillings. I normally bake on Wed, ice on Thur, and decorate on Fri. It will not get soggy.

that's a relief. My mom said "You baked it on Wednesday? What if they all get food poisoning?!" I told her I relied on the advice of professionals in my cake forum. Thanks for the help.
