Need Opinion On Filling

I am making an almond wedding cake. The bride to be has requested a mocha filling. Are there other fillings that would work better with almond that I might suggest? The mocha is good but can cover up the almond flavor of the cake. Thanks for the input. thumbs_up.gif

Almond is a fairly delicate flavor - I would think something like a fruit filling (raspberry, strawberry, peach, lemon curd) may go better with it than a chocolate-based filling.

However, a hazelnut cake with a chocolate hazelnut filling (like Nutella) would be fabulous.

I have also made a mocha walnut cake before - wonderful!

Thanks. I was thinking the same thing. I think rasberry would be better and prettier with its pink color. any other suggestions from fellow members?

I second the lemon curd.

Curious, do you use almond paste in yours or just flavoring? I've always wondered if there was a major difference between the two.

I just use almond extract. Now on the lemon curd doesn't it have to be refrigerated? It would taste great but it is a fondant covered cake that will be out.
