We're putting granite in our new house, wonder if I should go with quartz.

Granite and marble are used all around the world for thousands and thousands of years.
But, it's understandable that the manufacturers of "plastic" countertops are becoming very upset now since granite and marble are taking a big slice of their market.
I bet Tom Cruise, Angelina Jolie & Brad, Donald Trump, Bill Gates just to name a few, don't use "plastic countertop" in theirs kitchens.
