I need receipe for frosting without confectioners sugar for a little boy who is allergic to corn. I was thinking of using a chocolate ganache, but I didn't have any success in the past with ganache. Thanks, I appreciate any help.

I think this recipe might work for you. It has a fudgey type consistency and is really easy to make.

One Minute Chocolate Frosting
1C granulated sugar
3T cream or milk
2 squares bitter baking chocolate
1 egg
1/8 t salt
2T butter
1t vanilla
Combine first 5 ingredients in a saucepan. Boil and stir for 1 minute. Remove from heat then add butter and vanilla. Beat with mixer until it reaches desired consistency.

Yummy! icon_wink.gif

Have you tried any of the meringue buttercreams like Italian Meringue Buttercream (IMBC) or Swiss Meringue Buttercream (SMBC)? They use sugar, egg whites, butter and flavorings. My favorite is IMBC by Shirley W in the recipe section. Please do a search for lots of great info on how to make and smooth.

If you need chocolate, I just made a fudge frosting that was made with unsweetened chocolate, sugar and evaporated milk. PM me if you need the recipe.
