Filling A Fondant Covered Cake With Fresh Fruit

I really like fresh fruit or fruit mousse fillings in the cakes, but I don't know how to keep them fresh if they are covered in fondant, as you can't refrigerate them. Any help would be great!

Give the sleeved fillings a try, they are really good, and no refrigeration is needed.
