I have to say I've never been a fan of butter cream icing. As a newer decorator I'm having a real problem loving my own cakes because the icing is just to heavy for me.

I've always loved the better cream icing you can get on grocery store cakes but I know that I have to buy Rich's better cream to do that. Can't make my own.

I was wondering if anyone has a recipe for a fluffy icing that pipes well?

I've heard (but have not tried) that you can use cool whip and add some cream of tartar or meringue powder to it and it will stabilize so you pipe that also? (any truth to this?)

Please help me love my cakes!
