I HAVE BEEN ASKED TO MAKE A NON ALCOHOLIC FRUITCAKE AND WOULD LIKE TO KNOW IF I SHOULD GO ABOUT MAKING IT IN THE SAME MANNER AS A FRUITCAKE THAT HAS BEEN CURED FOR TWO MONTHS WITH ALCOHOL, EXCEPT SUBSTITUTE THE ALCOHOL WITH ORANGE OR APPLE JUICE.IS IT NECESSARY TO CURE IT FOR TWO MONTHS?ALSO WHICH JUICE IS NICER OF THE TWO?AND FINALLY , HOW LONG WOULD A NON ALCOHOLIC FRUITCAKE KEEP AFTER THE WEDDING?

Orange juice is a a lot better for a traditional fruitcake. To moisten the cake after it's cooked you can make a simple syrup and flavour it with vanilla. It will make the cake moist and will help it from drying out.

THANX.IT REALLY DOES HELP.I NEVER THOUGHT OF USING A VANILLA INFUSED SIMPLE SYRUP.WHAT A LOVELY IDEA THAT IS .THANX
