I just got a request for 2 little cookie hearts with raspberry filling (think nfsc oreo style). How would I do this?? I wouldn't want the raspberry to fall out.

Any ideas??

the filling should be more frostingy than fillingy, i think. could you mix raspberry preserves into buttercream?

bake the cookies in heart shapes, then turn half of them over and leave the other half right side up. put the filling on a cookie, put another cookie on top. it won't fall out.

hhhmm...good question! When I do a filling, I do Thumbprint type (with a dollop of filling in the thumbprint area).

I'll definitely have to start this ahead of time for plenty of drying time. They want each heart to have their monogram on them then sandwich the two together.

I was going to use Toba's Glace icing, but it might be too soft for something like that.

I've never used Antonia's but read so many good things. Will that dry much harder than the glace?
