I have seen lemon with blueberry filling but the customer wants a blueberry cake with lemon bc ... she specifically said she doesn't want a "muffin" bite to it.... has to be cake textured...
Anybody know what I could do?

Can you use blueberry extract to flavor a white cake, and use blueberries in the batter.
The expanded flavors WASC cake has a berry option - you could use blueberries.

I make a vanilla cake and put defrosted frozen blueberries in it. If the customer specifically wants it more blue looking, just add some of the blueberry juice. You can add a touch of blueberry extract for a little more blueberry flavor, if you think it needs it.
This is the absolute BEST blueberry cake recipe. My grandfather from Maine used to make this cake for me and gave me the cookbook the recipe came from.
If you are looking to decorate it, then I'm not sure how good it will work. Taste wise though, you can't beat it.

I did this receipe last week for someone and put fondant over it for a racecar. worked great. I did add the extender receipe, because I needed a little extra cake. I tasted the scrapes and it was good, and my friend loved it.
INGREDIENTS:
1 yellow cake mix
1 package cream cheese, 8 ounces, room temperature
1/2 cup vegetable oil
3 eggs
1 can blueberries, drained (15 oz)
2 teaspoons vanilla
PREPARATION:
Combine cake mix, cream cheese, oil, and eggs; mix well. Add blueberries and vanilla; stir until well combined. Pour into a greased and floured tube pan. Bake at 350 degrees for about 45 minutes, or until done.
