A Lovely Peanut Butter-Y Fudge-Y Cake

I tried this recipe this weekend for the grownups to eat at my DDs 2nd bday party (DD had an Elmo cake...and elmo ended up being pink cause I ran out of red, haha icon_biggrin.gif )

ANYHOO...this was a totally different recipe but it was delish!!! The cake is light and moist and the icing makes a fudge-like layer over top of it all. Great with vanilla ice cream or milk! Thought I'd share. It came from recipezaar, I halved the recipe to make a 9x13.

Peanut Butter Sheet Cake

SERVES 24

2 cups sugar
2 cups self-rising flour
1 cup butter
1 cup peanut butter
1 cup water
1/2 cup buttermilk
2 eggs
1 teaspoon vanilla

ICING
1/2 cup butter
1/2 cup peanut butter
1/3 cup buttermilk
1 teaspoon vanilla
1 (1 lb) box powdered sugar

Directions
1.Mix sugar and self-rising flour; set aside.
2.Bring to a rapid boil 2 sticks of butter, 1 cup of peanut butter, and 1 cup of water.
3.Pour over dry ingredients.
4.Add to that 1/2 cup buttermilk, eggs, 1 teaspoon vanilla and then mix with mixer. (I DID BY HAND AND IT WAS FINE)
5.Pour into greased 18" x 12" pan and bake for 25-30 minutes at 350 degrees.
6.To make icing, bring to a boil 1 stick of remaining butter, 1/2 cup peanut butter, 1/3 cup buttermilk, 1 teaspoon vanilla; boil, add powdered sugar, mix well, and pour over hot cake. (I NEEDED TO ADD EXTRA MILK TO MAKE FROSTING POUR-ABLE)
