Newbie Struggling With Bc

I am testing a new buttercream recipe (something other than Wilton) and I am finding the icing won't stick to the cake! Is this normal? Every swipe of the spatula reveals another section of cake - I have loaded the cake with icing in hopes that doing a thicker layer may help and still as I try to cover and smooth the icing it just pulls away from the cake. If anyone has any advice I would be so appreciative.

Is your icing too thick? Maybe add a little water would help?

Yep! I was thinking too stiff also. Try thinning it a little and I bet that will help. icon_smile.gif

You may need to thin your icing.

Yes I agree too thick. I'm amazed at how many recipes call for like 4 tbl of water or milk per batch and I use almost a 1/2 cup. Now this is for spreading icing to cover the cake, not for making flowers. Hope this helps, thin a little at a time.
