I have seen so many recipes for whipped ganache using semi-sweet or bittersweet chocolate but I don't like either one. Does anyone have a recipe for whipped milk chocolate ganache? My other question is can whipped ganache stay out like regular ganache?
To make milk chocolate ganache, use milk chocolate chips.
To whip it, you start with a basic ganache recipe and wait until it cools. You start mixing (I use a hand mixer) with a bit more heavy cream until you get the consistency you want. Maybe another 1/4 cup of heavy cream?
I find that whipped holds up to room temperature pretty decently, but not any type of heat.
Is a basic recipe equal parts chocolate and cream?
