OK.. this is a special request from my BF's sister who is turning 30 this weekend. She has requested a blue Maui and Pineapple cake ( one of her favorite drinks)

So I know I can make a Pineapple cake... but what do all of you suggest to incorporate the blue maui? Should I do it like a simple syrup? or mix it into the cake and bake it?

Oh and what type of icing should I go for?

She has really stumped me on this one.

I would definitely do it in the simply syrup so you can get the flavor well!! What a yummy request!! Please let me know how it goes!

I sub weird things into the WASC recipe. Instead of 2 2/3 cups of water, I sub out half for all kinds of liquids. So, I would do that if I were asked to do it. Sub 1 1/3 cup blue maui for half the water, because it's the schnapps, it should be bold.

Then make some fresh pineapple filling. yum yum

OH pineapple filling instead I like that!

Hmm.. wonder if I sub'd pineapple juice in my icing if it would taste enough like pineapple to compliment the cake?

Anyone ever made a pineapple icing?

If not... any ideas for what type of icing to use?
