I made BC Icing using the Wilton recipe and it is too soft and fluffy. How do I harden it? I followed the recipe exactly as it said. However, it is still too soft.
TIA
LeAnn

I would think it has too much liquid, try adding more powdered sugar.

If you mean it's too thin, you need to add more sugar to get it to the consistency you need.

If you mean it's not crusting.... crusting is the result of the ratio between sugar and fat in the recipe. More sugar = more crusting.

I think you may have whipped it at a speed set too hight and possibly for too long. I always use the lowest speed on my KA and only until the icing is thoroughly combined, not fluffy!

Thank you everyone. I am a total newbie and this is only my second cake. My very first batch of BC (last week) was perfect-so I'm not sure what happened tonight. I will add more sugar. Thank you!

The weather could also have made the difference in the batches. If it's humid or your making it in a warm kitchen that might do it.
