Was at a retreat earlier this week. We were greeted on arrival with a tray of cookies - crisp brownie-like shell, soft moist coconut center. We were told that the camp kitchen didn't make them but purchased frozen from a source in Richmond, VA. Anyone have a recipe or know the source?

I could SO go for one of those right now.... I've never had something like that but it sounds lovely. So here's a bump for you and also so that I can watch and see if someone gives us a recipe!

I would try adapting a coconut macaroon brownie recipe. Maybe bake some in a mini-muffin tin.
