I am getting ready to make a chocolate shoe from a mold. Does anyone know how to trim up chocolate? I don't want the edges to look jagged; I want a smooth line. Thanks!

Once the mold is filled, put the mold on a flat surface and using a long spatula, scrape the top edge of the mold the leave a clean edge.

Very little chocolate should remain on the seam edge. Once you take it from the mold (use gloves) you can use a sharp knife to perfect the edge.
