I am making a cake that is due tomorrow. The cake is filled with a white chocolate cream cheese filling and iced with IMBC. The cake will be covered with fondant and will also have fondant decorations. Can I decorate the cake and leave it out without refrigeration or does it need to be refrigerated, or should I just wait and decorate tomorrow? I'm just don't know what to do. TIA!

Cream cheese filling must be refrigerated, and the meringue b/c's are generally refrigerated.

Fondant can be successfully refrigerated. icon_smile.gif

Just be sure to not touch any spots of condensation that form; they will evaporate on their own without leaving any marks.
