Could Anyone Help Me Adjust This Recipe?

I want to try this recipe as a yellow cake instead of coconut cake. It calls for three cups of shredded coconut and I'm wondering if I omit those three cups, will it have an effect on the cake and if so, what I could I substitute it with?

I THINK since it calls for fresh coconut, you should be okay just omitting it. The only way to find out for sure is to try it, I'm afraid!

I think it will be ok without the coconut(some people put it in the cake to enhance the coconut flavor) and the other adjustment would be the eggs. I would not seperate them but I would use 3 whole eggs and 2 yolks that way it should have a nice yellow color and I would use coconut extract 2 teaspoons. Good Luck.
