Help!! Need Mint Recipe To Go With Wedding Cake

I need a cream cheese mint recipe to go with a wedding cake that has a cream cheese filling. If anyone has a recipe for this, I would greatly appreciate it. Thanks in advance!! icon_biggrin.gif

Um, I have one, but please make sure to test it out. I've varied it a lot ... the ingredient ratios might be a bit off, I've had to make it thicker sometimes, thinner sometimes...I've made it with varying amounts and types of mint extract, tried it with salted and unsalted butter...and I never wrote down what actually worked best. icon_smile.gif

3 8 oz packages cream cheese, softened
6 cups powdered sugar
1/2 cup butter, soft
3/4 tsp peppermint extract

My recipe is similar but no butter...


8 oz cream cheese
2 lbs powdered sugar
1/2 tsp peppermint extract


Mix it all together well. After well blended, pinch off small amount, roll into a ball, roll in granulated sugar and then mold.
