I am away this weekend and a client really wants to order my strawberry shortcake cake, freeze it on Thursday and use it on Sunday? I fill it with a whipping cream/instant pudding filling then lay sliced strawberries over the filling. Will it still taste as fresh especially then strawberries will they still keep there nice red colour or do they turn a dull colour if frozen? Will the strawberries run too much juice out of them when thawing out?

My client really wants to order this cake, I have never frozen a cake filled with fresh fruit????
