Storing Fondant

I use MMF and I have quite a few cakes due in a few weeks. How long in advance can I make fondant and how do I store it? I would like to do as much in advance as possible.

lasts up to a year IF

very well wrapped in plastic warp and then sealed in a container.

I usually:
1) warp tightly in plastic wrap (get all air out)
2) put in a heavy duty ziplock bag (get out as much air as possible)
3) toss in a lidded plastic container
4) then into the cupboard.

the key is KEEP THE AIR OUT -- so it doesn't dry out.

you could also use one of those vacuum sealers too (i don't as the bags are just too expensive!)
