I like to do all the tiers seperate and then stack. This way I can pipe on my turntable. And if something happens after it has crusted while stacking it does not take much to fix when doing basket weave. I just make sure I bring the same tip with me when I deliver and stack (I like stacking on site. I must have a middle dowel phobia ) that way I can fix anything needed. Sometimes I leave the bottom row untill I stack that way I can make sure it looks just right and need nothing more to finish off the bottom edges that meet the cake.
