How Early To Fill And Deliver

Hi all - I'm curious as to how early people have delivered cakes in the past. I'm doing a cake for a friend and she wants to pick up the cake 2 days before the event, which means I'll have to actually have it ready 3 days before the event (since I have to work). I'm nervous that the cake won't taste fresh after sitting filled for that long. Any tips? Should I tell her to go with a bakery instead?

Wow, five days is the actual very last ultimate limit in my book and only if nothing else can be worked out!

I always use a simple syrup wash and flash freeze to help moisture levels.

Edited to add: I would not use a perishable filling either - simply Buttercream for longevity.

So if the event is on Saturday you will be decorating the cake on Wednesday? I would think 3 days would be fine.
