So I came across another one of my mothers recipes found stuffed in a book while cleaning out my attic. This has got to be the most unusual combo I have ever come across, I think. I Bet this could be a hit with the grab and go breakfast crowd, great with a cup of hot coffee...

Breakfast Bacon Cookies

·1/2 pound cooked crisp apple or maple flavored bacon
·1/2 cup unsalted butter
·3/4 cup brown sugar
·1 egg
·1 cup of whole wheat flour
·1/4 teaspoon baking soda
·2 cups of multi-grain flakes

Preheat oven to 350 degrees. Cook bacon until very crisp, drain well and break into 1/2 inch pieces. Beat together butter and sugar until fluffy. Beat in egg. Combine dry ingrediants. Add into butter mixture. Add in bacon and flakes. Combine well.
Drop by scoops (2 tbsps) onto ungreased cookie sheet. Make sure these are spread apart about 1 to 2 inches. Bake for 15-18 minutes. Cool on sheet for a minute and then remove to rack.

I bet these would be fabulous with a nice maple sausage patty inbetween 2 of them. Puts the McGriddles to shame...lol

I have a similar recipe that is described as "A complete bkfst in a cookie"; bacon, egg, cereal & oj all in one delicious cookieicon_smile.gif They're good!

I HAVE eaten these! Friend at church made them and brought to Sunday School. Most of the members appreciated her effort, but, didn't appreciate the cookies! LOL She ended up giving my husband 2 dozen. I got ONE.....guess where the rest went? LOL They are VERY good and I don't even LIKE McGriddles!

I can envision a muffin, but a cookiie...I think I'd have to have a sample to make up my mind. So, when are you shipping them out to all of us test bunnies? icon_lol.gif

Mmm, sounds good! Bacon in a cookie - why not? They have cookies with potato chips in them (my DH's aunt used to make them about 22 years ago).

I'm going to try these one day soon. Thanks for sharing.

Bacon, it is it own food group isn't it. At least my family thinks so. These sound interesting. I may have to try them. Then we could make bacon sandwiches with them. Gotta love bacon with a side of bacon. HEY, OT but I heard recently that they're trying to genetically change the fat in pork so that it's good for you....

Wow. Cool to know so many of you have either had these aro would like to try them. My notification about the replies never let me know there were any.

I have a breafast I am attending next week, and I believe I am going to make these and see how it goes!
