I have a friend that would like me to make a cake for her son but we are all going away for the weekend. Can I decorate the cake on Friday and use the cake for a party on Sunday afternoon? Should I store it in the refrigerator? Should I use a non crusting buttercream? I made a cake for Easter and it sat for a couple of days and was still moist and tasted good but the buttercream was really crusty, I used Buttercream Dream and didn't know if using non crusting would be better. I don't believe that she wants fondant.

I have done it before... baked Thurs, deco Fri... party Sunday. I kept the cakes in boxes in the refridgerator. Let them come to temp in the boxes. I used a half butter half shortening icing. HTH
