I'm making a cake for a military promotion reception (following the ceremony) and I wanted something extra special and flavorful. I used the 'Seedless Raspberry filling' recipe that is posted on Cakeboss, except I only had a jar of apricot preserves on hand. I followed the recipe (except used all water), then added 2 tbls of Peach Schnapps and then 1/2 of the 13.5 oz jar of apricot preserves. Yummy!! I will definitely be doing this one again!

1/2 13.5 oz jar of apricot preserves (or any fruit preserves)
1/2 cup sugar
1 tsp lemon juice
1/2 cup water
2 heaping tablespoons cornstarch
2 tbsp Peach Schnapps (or Apricot Brandy icon_razz.gif )(or whatever flavor compliments your fruit preserves)

In a small saucepan, combine water, sugar, lemon juice, and cornstarch. Cook over medium heat, whisking constantly (or it will get lumpy!), until mixture bubbles and thickens. Remove from heat, set aside to cool for about 10 minutes.

To the cooled mixture in the saucepan, add 2 tablespoons liqueur and the fruit preserves. Stir well and refrigerate a few hours or overnight. Keeps in the refrigerator for at least a week.
