Strong But Flourless Cake!?

I want to make a birthday cake for my brother in law but he doesn't eat flour (wheat allergy). I need a really good recipe that will hold up under decorating and would maybe withstand some sculpting!
Never one to turn down a challenge, I would like to create some kind of ski slope on the top (I've bought a skiing Smurf to put on it!) as he is a keen skier, so I would need to be able to carve the cake as well without it crumbling.
Also, if anyone has any ideas about the ski slop bit, I'd be grateful!! His birthday is this Sunday 30th March!!

Hi, my brother has a wheat allergy too, but he is able to eat spelt flour and potato flour. We also have a make here in the uk called Dove's Farm and they make a gluten free and also wheat free. I have managed to make really good cakes from all 3 flours. In fact I made a really good carrot cake with spelt flour at the weekend. If he can take any other flour let me know and I'll send you some recipies.
