So, i made crusting cream cheese icing from the recipe on this site on Monday, I have alot left over and I wanted to ice cupcakes with it for Easter Sunday... it is in the fridge (covered) and I was wondering if it would still be good. Any Ideas??

Oh sure, if it has been in the fridge it should be fine. I've made a double batch of that recipe and used it two weeks in a row before.

The hard part is getting it to soften up enough to use it. Let is set out for a while and them whip it with the mixer really good.

Enjoy your Easter.
