I absolutely love the upside down icing technique, I love the "square" edges!!!!
I am having one problem though.
When I have flipped the cake over and take off the wax paper, some of the icing comes off with it. I have used this technique twice and both times, I have had this happen. It doesn't take all the icing off, but it leaves it looking pock-marked. Is there something I can do to change this? Would parchment be better?

Thanks,

Well, I always use parchment for mine but it's mostly because I use parchment for everything so I haven't tried wax paper. The parchment has been pretty successful for me icon_smile.gif
