icon_surprised.gif It's the bridal shower tomorrow!!!

How long do I let the cakes defrost before working on anything? Will they expand or something? I'm covering in fondant, FYI.

Probably a couple of hours. Yes, they do expand some when they defrost. I learned that the hard way... cracked my buttercream. Not sure if it would do much to fondant though, I've never put fondant on a frozen cake.

You don't have to let them defrost before you cover them in fondant. In fact it's easier if you don't. Just work fast, than get them back in the freezer. When you thaw them out the next time make sure they are in a plastic bag to stop the humidty from the air condensing on the cakes and ruining them. Of course this depends on how you are finishing them...
