If the "little bottle of old fashioned" is the grocery store variety.....definitely use gel. The professional decorating brands have more "pigments" in them...are more dense color and therefore require less to get more. Does this make sense???? LOL

Definitely go with gel colors if you can. The 'good ol' fashioned' food colors are too watery and may upset the balance of liquid in your batter if you add too much.

Either can work. I recently made a green and red checkerboard cake. I was just experimenting so I did not want to use my "good" colours. The cake came out fine, texture and taste was as normal. I used just around 1/2 bottle of red, and a little under 1/2 bottle of green for 2 2 layer cake mixes.

I went with the gel, it is in the oven, we'll see. It is also an egg free, dairy free cake, so the whole thing may be a disaster anyway, we'll see. thanks for the advice.
