Help!!! This is my first time icing a cake with whipped icing and it did not crust so I could not smooth it. Does anyone have a recipe that will crust or any suggestions. I have a cake to do next week and they want one layer with cream cheese(got that) and the other layer with whipped. Both layers in a deep chocolate color. Heres the thing I want both layers to be smooth so I can add light blue and cream stripes on it. Any suggestions. I used the Bettercreme (from GFS) in my fall cake in my photos and had to put the lines in it because it would not smooth.

Thanks for getting back with me. It sounds as if it just takes practice to get this smooth since you can't use Viva or Melvira methods.

I made a cake last week with whipped icing. As far as icing the cake it smoothed out pretty easy with the spatula. I used it also to do my border and decorations. I found it difficult to make even a shell border with it. I think practice with this icing would help.
