Cheesecake and pie, make 24 hrs ahead. What are the cheese truffles? Never heard of them!

These should be made 24-48 hours ahead, to let the flavors mix well. For example, if you need everything Sunday, make cheese balls Friday and the pie and cheesecake Saturday. You could also have the pie ready Saturday and bake Sunday while you're getting ready to go, and it would be fresh and warm.

Thanks! So you think that 3-4 days might be too far in advance? Even if stored in an air tight container in the fridge?

The cheeseballs would be okay, cheesecake probably, pie I would freeze, take out an wrap, and keep in the freezer. Freezing before wrapping will help it keep its shape. So, yes, you can make them before. Someone else will have better info on how far in advance with the cheesecake, hopefully.
