Hi all - I have been asked to make a topsy turvey cake for teh 20th. I have printed loads of instructions and am excited to give this a try. My question is if I can use teh Enhanced Box mix recipe and still have the cake hold up. Please advise.

Thanks,
kellyshe

I haven't made one but I have read that the cake needs to be dense...pound cake for example. I made pound cake by adding pudding to a box mix and an extra egg.

You can do a topsy turvey/mad hatter out of anything. It's the support system that's important not the density of the cake.

I would add the cake mix extender listeded here to any cake you make. It makes a slightly denser and definitely homemade tasting cake.

I think as a first timer at this type of cake, you'd do well to use a very dense cake. It will be more forgiving and give you less problems. Although having the right support system is paramount, if your cake itself gives you problems, all the support in the world won't help. A denser cake also holds the weight of the fondant better, making the cake look neater. Also, don't use any fancy/slippery fillings, or too much of any filling!

I use the DH pound cake recipe from the yellow cake box and find that it works very, very well.

1 pkg Duncan Hines® Moist Deluxe® Classic Yellow Cake Mix (or any other DH Mix)
1 (3.4 oz) pkg vanilla instant pudding and pie filling (or any other instant pudding flavor that compliments the flavor of the cake mix used)
4 large eggs
1 cup water
1/3 cup vegetable oil

I've never been let down by this recipe.
