I wanted to add something to a boxed carrot cake mix so it doesn't taste like a boxed cake. Any ideas???

Maybe some sour cream and a small jar of carrot baby food?

Maybe like 1/2 cup sour cream would do it--and I'd cut down the oil by like 1/4 cup. Makes for a nice dense cake without too much fat.

I add 1/2 c grated or shredded carrots per cake mix. Also you can add a little extra spice to perk it up... such as 1/4 t cinnamon, a pinch each of ginger and nutmeg or you could use pumpkin pie spice instead.
