Royal Icing Question

What is the shelf life for royal icing? I made some cookies today and used Antonia74's icing and have an upcoming cake and cookie order. I have a ton of icing left over since I only decorated 6 cookies. How long will it keep in covered air tight containers?

You can keep it for about 2 weeks, covered and airtight. It does not need to be refrigerated. It kind of develops a consistency like marshmallow fluff when it sits for more than a few hours, and it can separate a little bit too, so it absolutely must be re-whipped before you use it again. I just use a table spoon and mix it by hand.

I freeze my RI and just add more powdered sugar once it defrosts 'coz it will be too moist and rebeat the mixture back to correct / required consistency. Egg whites are OK to freeze.
