I add up the cost of ingredients and materials and then multiply by 4. Some people multiple be 3. For example, a dozen eggs where I live is about a dollar. Divide the dollar by 12 and you'll get the cost of each egg. There are 8 cups of confectioner sugar per bag. Divide 8 into the cost of the bag and you'll get the cost per cup. See where I'm going? Don't forget to include the cost of cake board, foil, and any other structure stuff, and .2% of the total cost for misc. stuff like salt, vanilla, tape, electrity etc.
This method builds in a payment for your time and talent without dealing with a matrix which is more detailed.
