White Chocolate Ganache Question

I am making a 1st b'day cake for a customer and she has requested a white ganache filling on the cake. I have never made a ganache before and was just wondering if anyone has a great recipe and also how long can a cake covered in MMF with ganache filling be left out at room temperature. Is white ganache an filling which doesn't need refrigeration?

Barky for white chocolate ganache:

240ml cream
1 tblsp butter
30 grams sugar
455 gram white chocolate

Break chocolate up and place in metal bowl.

Bring the first 3 ingrdients to the boil, stirring as you go, and pour over the chocolate. Leave for 5 minutes and then stir from the middle to the outside. It make look like it is not coming together just keep stirring for some reason it takes longer than brown chocolate.

Let cool for an hour before pouring or spreading over the cake. If you place it in the fridge it will thicken enough to actually pipe beautifully with.

I always keep it in the fridge because I am not sure if I can leave it out.
