Advice Needed On Making Chocolate Or Brown Mmf
Decorating By bmcd17 Updated 27 Sep 2007 , 1:15pm by bmcd17
I am thinking of making MMF for the first time and I think I want to make it brown in color, but I was also thinking of making it chocolate flavored. I have read on here where you can use the chocolate marshmallows, but I'm not sure that would give me a dark enough brown color that I want. The color I want is like a Hershey's bar. I wasn't sure if I should try to use regular marshmallows and color it or if I should just try to make chocolate flavored MMF and get the color at the same time.
Does anyone have any suggestions on whether it would be easier to just color it a brown color or try to make it chocolate flavored? Does this make sense what I'm asking?
Thanks!
You can add some cocoa powder to the ps for chocolate, and for a more chocolate flavor, use some Chocolate Loraine flavoring
...beware though that you will change the texture of the fondant a little if you add too much cocoa so use sparingly. If not brown enough for you...after you let the MMF sit Or even in the mixer add some brown (americolor or chefmaster works best) and if you want it just a tad darker just a LITTLE bit of black.

I have found that it takes alot of brown gel to get a good chocolate brown color, which effects the taste and the texture. Since I have discovered pre-made dark chocolate fondant from Pettinice or Satin Ice, I will never try to get it that way myself. They are so yummy and taste like tootsie roll!!
did you see the post I made on Choc. Marshmallows there are pics in that thread showing how dark choc. the MMF was without color added and then I added black Americolor. I am sure if you added brown you could make it the color you want. Let me see if I can find that thread...
Hi,
I made my first chocolate MMF the other day with chocolate marshmallows and cocoa powder, and I agree that you have to be careful with the amount of cocoa. I divided my batch in half and added cocoa to one half, but not the other. The half with the cocoa was very crumbly and hard to work with. The batch with just the chocolate marshmallows and gel color was much better to work with. Maybe I'll try less cocoa next time.
Wow, can't wait to try Kraft MM! Thanks NEWTODECORATING!!
Now, for chocolate MMF, I do add cocoa powder and some melted chips and works great, just make sure you don't add too much cocoa powder or it will break on you, will become super dry. I also noticed that chocolate MMF takes a LOT more crisco than regular MMF. Good luck!
And to be honest with you, I think NEWTODECORATING's idea would be easier, just add extra brown gel to get the deep brown you are after. Target carries them in my area.
