How Soon To Bake?

I have 2 cakes for this Saturday...
I am doing a 3 tier fondant covered wedding cake (simple decorations with ribbon and silk leaves) as well as my niece's 5th birthday cake. In total, I'm baking 3 flavors of cake... I also work full time at the hospital, so I kind of have to do things in stages icon_razz.gif
How soon should I start baking? Usually, I only do one cake per weekend!

You could bake today and freeze them if you have the freezer room, if NOT you could bake them Thursday and cover them well icon_smile.gif

Bake now, wrap well in plastic wrap and put in freezer until you are ready to decorate them. I do this regularly and I honestly believe it makes the cakes more moist because you are freezing the moisture into the cake.

Bake Thursday, (wrap in plastic overnight) decorate Friday and deliver on Saturday...Ta da!
