Can I Freeze Coconut-Pecan Frosting?

I made a german chocolate cake on Friday and have a ton of frosting left over. Can I freeze it in a ziploc baggie? How low will it keep? I don't make german chocolate cake very often and I'd love to use this up in the middle of December when my dad comes into town. Will it keep until then? Will freezing it mess with the texture of the frosting?

I believe you can freeze it. I've never done it but I have bought a cake that was a frozen German Chocolate cake. This was way before I started doing cakes. I recall it was fine.

Yes you can freeze german chocolate icing, just make sure you seal it well. When you are ready thaw in the frig, and stir icing to revive the consistency.
