Hi,

Tylose or CMC (Sodium carboxymethycellulose) works as a hardener especially in place where humidity is high. I add it to my gumpaste or fondant when making flowers/decorations and it dries rock-hard.

Nicholas Lodge has a recipe for Gumpaste using Tylose instead of Gum Tragacanth.

He says: "The advantage of the tylose is that the paste is less expensive, easier to make, holds up better in humidity and is whiter in color"

You can find the recipe on his site

http://www.nicholaslodge.com/gumpaste.htm

I'm sorry I do not know what it is called in Spanish.

I just bought some and on the label it says " tylose serves as a binder and thickener for sugar paste and also as stabilizers in ice cream, delicatessen products, dairy produce and soft drinks"
