Can You Refreeze Swiss Meringue Buttercream?

I have some swiss meringue buttercream that I froze and now that I'm using it I'm realizing I don't need all of it.... can I refreeze it?

Along the same line - when you freeze fondant, what do you do to defrost it? And can you re-freeze it later?

Probably not. I would think that after a while it would not be good anymore. I have never froze it for long periods of time. I have never froze fondant either but refridgerated it. Are you talking about freezeing unused fondant?? I know that satin ice has a shelf life of a year and that is open I believe.

Well actually it's only been frozen for about a week to a week and a half..... I just defrosted it today......... so I didn't know if I could refreeze it after that or if it was going to have to be used....

I am sure someone has. I just remember that if you unfreeze something you should not refreeze it again.
