How Do I Get Fondant Not To Break Appart In Crumbs...

Hello everyone,

So I've been using FONDANT for the past 6 cakes I've done and it all worked out well...all of the sudden...it starts to break apart...when I start kneading the fondant, I get pieces falling appart like bread crumbs and not to mention that when I get it out of the wrapping plastic it is SOOOOO hard... what could be happening? I'm using the same recipe to make the fondant all the time...

I live up north in Toronto, CAN- could it be that because we're getting bits of winter weather here it's affecting the paste some how?

Please help...don't know what to do!Should I refrigerate? But I thought you're not suppose to refrigerate FONDANT?

I add shortening to mine when it wants to do that.
