I was hoping some one would have a smooth fudge Icing. The recipe I have been using is a bit grainy. Or maybe someone could tell me what I am doing wrong. Thanks for your help.

Chocolate Fudge Icing

½ c Butter
3 oz unsweetened chocolate
1 lb Powdered Sugar
½ tsp Vanilla Extract
¼ tsp salt
1/3 -1/2 c Milk


Melt Chocolate and Butter together
Mix Sugar, Vanilla, Salt and Milk
Blend in Chocolate mix

If it was me I'd add the chocolate to the butter, dissolve the salt in warmed milk, mix the liquids with the butter/chocolate till fully incorporated. add the powdered sugar a little at a time making sure its incorporated between each addition then let it mix for a good 5 minutes or more on low speed to avoid air bubbles and to allow the sugar to "melt" into the butter.

1/2 cup butter
1/4 cup shortening
1/3 cup unsweetened cocoa powder
2 cups confectioners' sugar
2 tablespoons milk
1 cup hot fudge topping
1 teaspoon vanilla extract


Cream together the butter or margarine with the shortening. Sift the cocoa with the confectioners' sugar and add to the creamed mixture. Mix together adding 1 tablespoon at a time of milk to keep mixture smooth. Don't add more than 1/4 cup of milk. Add the hot fudge topping and the vanilla extract. Blend until smooth and creamy.

Oh it REALLY is and I'm one of those that can't ever do a good chocolate icing, it always turns out like the original posters! I still can't stop dipping my spoon in it, almost tastes like canned but BETTER! You need to patent this bad boy haha icon_wink.gif Thanks again!

sounds fabulous--will have to try it. DH loves chocolate icing and I've not been able to come up with homemade that he likes.

I can't wait to try this stuff...I too have chocolate icing issues....I taste it and it seems grainy to me too. I tried the chocolate syrup frosting from this site and it was grainy too...I can't wait to try this stuff!!

Tried this frosting over the weekend. Awesome color and flavor! I had some trouble with the consistency for piping. May need to adjust a little ( but then again, I don't measure exact on most things)

I did this recipe this past weekend and it was a HUGE hit! I loved it and so did everyone else! I used it to ice a chocolate cake w/ cookies n cream filling -it went so fast I didn't get to take a picture! AND, there were no left overs icon_cry.gif

GREAT recipe! And I think I am going to use it in an upcoming wedding cake for filling w/ a turle flavor, I'm thinking of using it then drizzling caramel/pecan mixture on top for the fillings. Mmmm.... sounds yummy! thumbs_up.gif
