How about a fruit filling? Strawberry jam? That's one of my fav fillings. HTH

If your sponge cake is vanilla, I would use Lemon curd for a filling....I often mix it with buttercream icing and it is really delicious

If it is chocolate, then I would do raspberry flavoured buttercream and if you like, you can add Chambord which is raspberry flavoured liqueur.
Alternately, chocolate buttercream flavoured with Grand Marnier is also really nice and the added liqueurs are really not that much alcohol but add that nice little flavour touch.

A delicious chocolate filling is also the Sarah Bernhardt Glaze that ShirleyW submitted...it is dark and rich..you can wait till it firms up and use it as a filling...you can dip fruit in it...it is divine and easy to make..

If it is sitting out for a while, any of these would do..
Hope that helps
Jane
