could i add pudding or jello (i forget which it is to make the cake more moist and thicker??) to a banana nut cupcakes? or strawberry cupcakes? how about carrot cake?

Instant pudding is mostly sugar and some modified food starch. Adding too much sugar, and/or fat or leavening to a cake will cause it to fall.
