I make way more vanilla buttercream than chocolate and this has been a busy week for me. As I was pouring the powdered sugar in tonight I realized about half way through that this was supposed to be chocolate buttercream. No biggie, just add the cocoa and vanilla right away. Then I decided that although I usually use 2 tbs of corn syrup, eh, let's just go with one tonight. I absolutely noticed a difference, the bc dried quicker, couldn't get it as smooth as I wanted, and when I picked up the cake it made little creases across the top and sides.
And I don't know about the rest of you but I have the toughest time coming up with decorating ideas for a chocolate cake. I've been trying for a week to come up with an idea for this cake! It's for my cousin's daughter and she gave me free reign so I decided to try something new, like painting on a cake (yesterday it was passion flowers-in my gallery). It was fairly easy but I'm going to have to tweak it some to get it to look the way it's supposed to.
It has also been raining for about 3 days straight here so it's very humid. The last 2 cake boxes I used was like trying to fold a paper towel into a box, they were very flimsy and I was fearful that the sides would brush the cake. Does anyone else have that problem?

You can decorate a chocolate cake with lots of different colors - and they don't have to be chocolate. I've paired chocolate with hot pink and turquoise before and everyone loved them. Any type of scroll work in a darker or lighter shade of chocolate is always classy too. And don't forget about the impression mats - that always looks nice on chocolate!

I wish we had your rain - we haven't had any - zilch - none -- in over a month!! Plus the temperature has been over 95 degrees for over 25 days and the humidity has been unbearable!! We are a farming communicty and the crops are suffering terribly!!
A solution you can try instead of the cardboard cake boxes are to place your cakes in rubbermaid containers - such as those you would use for under the bed storage. These containers help lock in the freshness of the cake and are much easier to travel with. As I said earlier I am in a rural area/small town -- and I have written "return to Suze" on the box and I usually get it back within a couple of days. If not - I know who has it and I give them a call. I also use plywood boards for my cake boards to keep the cakes from cracking when I pick them up. Thank goodness for my handman DH!!
